Master baker Simon Hubig opened the Simon Hubig Pie Company in Fort Worth, Texas in the early 1910's.  The company grew to include a chain of bakeries in the southeastern U.S.

 

The New Orleans bakery opened in 1922 at 2417 Dauphine Street.  The stock market crash and depression brought down the chain but the N.O. pie maker is still operating (post Katrina) at its original location in the Bywater.
